Blackened Salmon w/ Pineapple Salsa

What is the Mediterranean Style of eating?


Numerous studies have found that the Mediterranean diet can reduce the risk for diabetes, high cholesterol, dementia, memory loss, depression, and breast cancer. The diet which is more of an eating style than a restricted diet, has also been linked to stronger bones, a healthier heart and longer life.


The diet features simple plant based cooking with the majority of each meal focused on fruits, vegetbles, whole grains, beans and seeds with a few nuts and a heavy empahis on extra virgin olive oil. Sugar and refined foods are minimal and reserved for special occasions.


Red meat is used sparingly usually only to flavor a dish. Eathing healthy, oily fish, which are packed with omega - 3 fatty acids, is encouraged, while eggs, dairy, and poultry are eaten in much smaller portions than in the traditional Western diet.


Most importantly - Lifestyle changes that are part of the diet include eating with friends and family coupled with mindful movement and exercise.

Ingredients

Blackening Seasoning:

1 tablespoon ground paprika

1 teaspoon garlic powder

1 teaspoon dried thyme

Pinch of ground cayenne

1/4 teaspoon ground black pepper

6 ounces salmon

Olive Oil


For the salsa:

1/4 cup chopped fresh pineapple

1/4 cup chopped bell pepper or tomato

1 jalapeño, seeded and diced (optional)

1/2 cup diced red onion

1 tablespoon fresh cilantro

Juice of 1 lime

Pinch of salt and pepper


Optional Sides - White Rice and Asparagus


Directions:

Preheat the oven to 375°F.

In a bowl, combine the blackening seasoning: Rub the seasoning onto all sides of the salmon.


Sear salmon in non stick pan on medium heat for 3 min on each side. then place the seasoned salmon on the sheet tray and bake it for 5 to 10 minutes, or until the salmon is firm but not dry.


While the salmon is baking, prepare the salsa. Combine all the salsa ingredients in a bowl and let the flavors meld at room temperature until the salmon is ready. Top the cooked salmon and enjoy.
