Cheesecake Bites!

Everyone enjoys dessert at parties. When hosting an event - bite size is the way to go. This allows people to not feel “guilty” when reaching for their second brownie or cheesecake. This recipe is one I have used for years. But if you don’t have time to bake, run to your nearest Whole Foods where they have these already done and ready to purchase!
Ingredients:
For the Crust:
1 cup graham cracker crumbs
3 tablespoons melted butter
2 tablespoons granulated sugar
For the Cheesecake Filling:
2 packages (16 ounces) cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream
Toppings (optional):
Fresh berries, chocolate ganache, whipped cream, or fruit preserves
Instructions:
1. Preheat the Oven:
Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners.
2. Prepare the Crust:
a. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. b. Place a spoonful of the crust mixture into each mini muffin cup. c. Press down the crumbs with the back of a spoon to create a firm crust.
3. Make the Cheesecake Filling:
a. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. b. Add the sugar and continue to beat until well combined. c. Add the eggs, one at a time, beating well after each addition. d. Mix in the vanilla extract and sour cream until the batter is smooth.
4. Fill the Muffin Cups:
a. Spoon the cheesecake batter into each mini muffin cup, filling almost to the top. b. Smooth the tops with a spatula or the back of a spoon.
5. Bake:
Bake in the preheated oven for about 12-15 minutes, or until the cheesecakes are set and the edges are lightly golden.
6. Cool and Chill:
a. Allow the mini cheesecakes to cool in the muffin tin for a few minutes. b. Transfer them to a wire rack to cool completely. c. Once cooled, refrigerate for at least 2 hours or overnight.
7. Add Toppings:
Before serving, you can add your favorite toppings such as fresh berries, chocolate ganache, whipped cream, or fruit preserves.
