Fresh Citrus Salad

This citrus salad is the perfect thing to brighten up a winter day! Its refreshing and light, packed with flavor. Feel free to add greens and vegetables - Avocado, Radichio, Kale, Arugula, or even Fennel. You could also add your favorite grain to the mix - Chickpea, Farro, Quinoa. Finish everything off with fresh mint or basil and you have the perfect side dish or healthy snack!
Ingredients:
one package of your favorite greens (optional)
2 1 small orange, segmented or sliced
1 small pink grapefruit, segmented or sliced
2 kiwi segmented or sliced
1 avocado, sliced (optional)
2 tablespoons pine nuts (optional)
pomegranate seeds (one container - produce section)
¼ cup fresh mint leaves
Sea salt and freshly ground black pepper
Chef Pro Tip :
To showcase the fruit’s sweet flavor and juicy texture, cutting off the peel and white pith from each citrus wedge is key!
To Change the flavor profile - top this salad with parmesan cheese, capers or olives.
