December in the Midwest is the time when we know "Winter is coming." While it may not be snowing - YET- it is definitely soup season. This Cream of Potato Soup recipe is perfect for holiday get togethers or cozy nights at home. Feel free to add as much bacon as you would like! Enjoy
Cream of Potato Soup
Ingredients
2 tablespoons butter 1 yellow onion – diced 3 celery stalks – chopped 1 tablespoon minced garlic 2 whole carrots – diced 3 russet potatoes - peeled and diced 1 teaspoon salt ½ teaspoon white pepper 4 cups low sodium chicken broth 2 cup heavy cream
3 tablespoons flour
2cups cheddar cheese garnish: cooked and chopped bacon and chopped green onion
Instructions
1. In a large stock pot over medium-high heat combine onions, celery, carrots, garlic, and butter. Stir until butter is melted. Cook 2-3 minutes, stirring occasionally, until onions are translucent.
2. Add potatoes, season with salt and pepper, and cook for 5 minutes.
3. Stir in broth, bring to a low boil and cook for 10 minutes until potatoes begin to get tender.
4. Stir flour into the milk and gradually add into the soup along with heavy cream.
5. Cook for another 5 or so minutes until potatoes are fork-tender.
6. Transfer in batches to a blender or food processor and puree until smooth. Stir back into the pot.
7. Stir in cheese until completely melted. Taste, add salt and pepper if needed, and serve.
